Every bean starts with care in the soil. With our own cows we use natural fertilizer to grow our plants.
Beneath every coffee plant is a living ecosystem. Fertile soil teeming with life ensures our coffee grows healthy, strong, and full of character.
Worms might be small, but their role is huge. They turn our cow’s fertilizer into nutrient-rich soil that grows the coffee.
Our in-house biofactory and worm farm transform organic materials from our own cattle into nutrient-rich products. This ensures a completely self-sufficient and circular ecosystem.
Inside the biofactory, we refine organic matter into high-activity bio-inputs, plant extracts, and compost teas. A data-driven process that provides natural climate resistance without chemicals
The organic liquid nutrients are applied directly to the young coffee trees in our nursery. Prioritizing soil microbiology from the very first sprout builds a resilient root system.
Our farming approach is rooted in agroforestry, where coffee grows beneath a multi-layered canopy that mimics a natural forest. This living system regulates the microclimate, conserves water, and creates a thriving sanctuary for local wildlife alongside our harvest.
We are often accompanied by our dogs. They are companions to the farmers, playmates for the children, and a constant reminder of the community we are building.
From early morning light to full baskets carried down the slopes, every movement is guided by experience. At Severinas, handpicking isn’t just tradition it’s trust in the hands that know exactly when a cherry is ready.
The beans pass through machines that gently break open the fruit, separating each seed from its pulp. It’s a moment of transformation — precision meeting patience — guiding every bean closer to the cup you’ll savor.
Spread carefully on raised beds, they dry slowly, absorbing mountain air and gentle warmth. It’s a patient process — one that preserves clarity, sweetness, and depth — reminding us that the best flavors are born when we let nature take its time.
We cultivate it within our agroforestry system alongside our coffee.
Cardamom is the world’s third most expensive spice, prized for its complex aromatic profile. At Severinas, we cultivate it within our lower-level canopy, where it thrives in the humid, shaded forest understory right alongside our specialty coffee.
Our agroforestry model moves away from monoculture by mirroring a natural ecosystem. By integrating cardamom into our multi-layered design, we enhance local biodiversity, protect the soil, and strengthen regional food security.
Like our specialty coffee, premium cardamom requires an uncompromising approach to quality. Every single pod must be hand-picked at the exact moment of maturity, ensuring that its essential oils and distinct flavor notes are perfectly preserved.
We believe sustainability begins with people. We aim to be a driving force for positive local change, where coffee production becomes a catalyst for a fairer and more resilient community.
We consistently prioritize local solutions and local anchoring.
Creating as many long-term local jobs as possible —across all areas of the farm, from fields and nursery to stables, bioproduction, and construction.
Providing housing and support for key staff and their families—expanding living quarters and facilities on the farm.
Promoting gender equality—half of our employees are women, especially in planting, pruning, and nursery work.
